“The original brief was that needed to be share style,” explains Ben. “They wanted it to be for long, hangs, where you can just slowly sip on beers or nice wines over the afternoon, and just get a little snacks as you go along and not have to be forced to necessarily have, like, a big meal.”
“So we were thinking share food, and we love making sort of kebab-y kind of things, and then drawing from places that we always liked to eat when we were younger – I use to travel to America a lot, so I have lots of experience with going to lots of diners – and then we slowly started moving towards this sort of menu, which we’re calling pub meets kebab shop with a little bit of a Mediterranean twist. The idea is that it’s kind of a neighbourhood roadhouse.”
“You know, everybody judges the place by the lager and they decide whether they want to have other beers, and the fact is that the chips and the beer are best friends,” says Steph.
