Wanda's tallow hand-cut chips are the beginning of every service and the thing people talk about on the way home. Always crispy. Always golden. Always there.
Everything else is built around where we are, what's growing, what the moment calls for. We've done Italian. Mexican. Thai. Mediterranean. Fire-cooked and slow-braised. Skewers and flatbreads and things we invented that afternoon because the produce was too good not to.
We don't have a fixed menu. We have a philosophy — make food that suits the space, the season and the people around the table. The roadhouse goes where the road takes it.
